Une fois le s\u00e9chage termin\u00e9, les c\u0153urs de fruits doivent avoir une humidit\u00e9 r\u00e9siduelle comprise entre 6 et 12 %, et doivent avoir perdu jusqu\u2019\u00e0 50 % de leur poids. On utilise des appareils servant \u00e0 mesurer l\u2019humidit\u00e9 pour d\u00e9terminer son taux pr\u00e9sent dans les fruits secs. Ils d\u00e9terminent le pourcentage d\u2019humidit\u00e9 des fruits.
